Aunt Jo's Broccoli Salad

    broccolisalad.pdf photo7

On a recent trip to Michigan to visit my Aunt Jo, she made a great summer salad that I thought was just good ole Cole Slaw, but when she told me that it was actually Broccoli Cole Slaw!  Well, you could have fooled me, which she did.  I asked her for the recipe and instead of writing it down she showed me right then and there, and it took just a matter of minutes.

Here’s how to make your own broccoli salad, and your family will never know!

photo1Ingredients List: (the photo represents double ingredients)

  • 1 bag of Broccoli Slaw
  • 1 cup of slaw dressing
  • 1 apple
  • ½ cup of chopped walnuts
  • 1 cup of Craisins, or dried fruit
  • 5 minutes of your time

*will serve 4 easily

Instructions:

1) Get ready, start your watches.  Pour broccoli slaw in large mixing bowl.

2) Prepare apples by cutting into small pieces, cut one, eat one is my motto!

3) Pour apples, craisins…

…and walnuts into the mix or anything else you think will taste yummy.

4) Add the slaw dressing a little at a time and test for taste.

5) Mix all the ingredients together and check your watch, 5 minutes tops!

Serve with burgers, hotdogs, and just about any summer time food.  And don’t forget to top it off with Shari’s Blue Berry Pouch Pie.

Just a note, you can add a little basalmic vinegar to this recipe to "de-sweeten" the flavor, but boy is this a simple salad.

Hi Shari,

I've made this recipe before minus the apples and with sunflower seeds instead of walnuts. It's fantastic and perfect for summer. Lots of nutrition too.
