As fall arrives I start thinking about all those cold weather recipes my family and friends have shared over the years and I just start a cookin’!  this clam chowder recipe is from my very good friend Sharlee.  She has offered several recipes of hers to us over the years for our e-newsletters.  This on is one of my personal favorites.  It makes up fairly quickly and lasts!

 

Ingredients:

  • 1-2 carrots
  • 5-6 potatoes
  • 1 onion
  • celery
  • 2 tbsp. butter or margarine
  • 1 pint half and half
  • 1 can cream of celery soup
  • ½ lb. bacon
  • 1-2 cans clams

 

 

 

Instructions:

1) Clean, peel, dice and cook carrots and potatoes.

2) Saute onion and diced celery in two tablespoons of butter or margarine.

3) Drain potatoes and carrots and reserve about two potatoes worth of diced pieces in a bowl.  Add onion and celery to potatoes and carrots.  Add half and half and cook on low.

4) Mash the reserved two potatoes and add butter and pepper.

5) Stir mashed potato mixture into soup.

6) Add can of celery soup, clams and clam broth….

7) …and cooked, crumbled bacon.

8) Simmer several hours on low.  Stir occasionally.  If eating immediately, consistency should be just right.  Once refrigerated, soup will get very thick and need to be thinned by adding milk while reheating.  This makes it last and last!!

This is really Shari writing, I'm just on Matt's computer! I LOVE this recipe too. I'm sure it's not too healthy for you so I only make it once in a while! I also have to admit that my best friend, Sharlee, gave me this recipe years ago and it really has become a family favorite. Sounds like it might be a favorite for your family too! Thank you!

Shari...Do clams come in different sizes? If so, what size can do I use for your clam chowder recipe? I am anxious to try it out!

Hi Lynette!
The clams that I usually use come already chopped up in clam broth and I think the cans are about 6 oz. or something? They are the smaller size, I just don't have any in my pantry at the moment. Use as many clams as you like. Some people want mostly clam and others want just a taste. I'm somewhere in the middle!!

Shari...I tried your clam chowder recipe this weekend. My husband and I loved it! I definitely will be making this again. In fact, I am eating leftovers as we speak!!! Thanks again for a great recipe!
