Lime Rice

I have made a couple different recipes of lime rice and this one is the heartiest.  Of course, just about any long grain and wild rice recipe will be because of the richness of the rice.  By using long grain and wild rice, I believe the lime infusion is more subtle.  Try using light flavored brown basmati rice and the lime will really come through.

Ingredients List:

  • 6 oz. long grain and wild rice
  • 2 Tbsp. vegetable oil
  • ½ onion
  • 3 cloves garlic
  • 2 cups chicken or vegetable stock
  • 1-2 limes
  • Fresh cilantro

Instructions:

1. Heat the vegetable oil on medium heat and add the chopped onion and garlic.  Sauté together for a couple minutes until the onion is translucent.

2. Add the rice to the pan and stir into the onion and garlic mixture to coat the rice.  Warm for about a minute while stirring.

3. Add the vegetable or chicken stock and bring the mixture to a boil.  Once the stock is boiling, reduce the heat and allow the stock to simmer.  Cover and cook following the rice package suggestion for time.  My rice had to cook about 40 minutes for the rice to be soft and the stock completely absorbed.

 


Once the rice is done, add the lime juice and fluff up with a fork.  Transfer the rice to a serving dish and sprinkle with cilantro. 

 

I know this may sound crazy, but I LOVE the citrus bite of lime so when I make my brown basmati rice, I will drizzle the juice of about four limes on it and it truly IS lime rice.  In fact some may call it riced limes!!  Hahaha.
