I was watching a new TV show that comes on in the morning called “Flip My Food”, which show cases restaurants and then they introduce similar dishes that are healthier. I checked out the website for the show and found this recipe. I won’t say that it caught my eye because it was healthy, but it looked so easy and potentially delicious.

No Bake Pie

  • 1 ½ cup cream cheese
  • 1/3 cup melted butter
  • 3 cups confectioner sugar
  • 1 graham cracker crust pie shell
  • 1 cup pecans
  • 2 cups shredded coconut
  • Caramel sauce to drizzle
  • 8 tablespoons butter


1. In a bowl, mix cream cheese, butter and confectioner sugar with electric mixer for 1 to 2 minutes until smooth

2. Add cream cheese mixture to pie crust and set aside

3. Add 8 tablespoons of butter to cast iron skillet over medium-high heat and add pecans and shredded coconut and toast for 10 to 15 minutes until golden brown

4. Top the pie with pecan and coconut mix

Cook’s Notes:

“Oh My!” Is my reaction to this wonderful pie. It should be called “Cheesecake Pie” or “I Can’t Help Myself Pie” or “One Piece Isn’t Enough Pie”! Make it and you will be coming up your own name for it. There are so many great things about it, such as how easy it was to make and how good it tastes. I love that you can have all the ingredients on hand in case you need a quick dessert. And then it is so creamy and delicious!  The only change I made was the omission of the coconut….my family is not a fan. I used a really wonderful caramel sauce from Smucker’s called Simple Delight Salted Caramel Sauce. I highly recommend it if it is available to you.
